Friends, this Coffee Cinnamon Pudding is really fun to serve guests (for all coffee lovers). It’s one of my favorites, and who doesn’t love pudding?

I was raised on pudding (mostly chocolate, banana, and tapioca), so any pudding dessert is alright by me :) Which means a pudding pie (Lemonade Pie), or even this Irish Dark and White Bread Pudding (yum!). You get the idea! Add coffee? I’m a happy girl.

When my friends and I watched the Royal Wedding a couple weeks ago, for hours and actually days, we kept talking about all the details, and the beautiful message of “love” that was given at the ceremony. Those beautiful passages were all-too-familiar to us, because we’ve heard them over and over again. They are easy to read, but not always easy to live out – completely. Right? Which kept us talking about it, because it’s so attractive.

Yes, love is attractive and I think we desperately want to love more than we do.

Is there ever too much love that we can give to others?

It’s easy to love when life is cruising along with no difficulties.
It’s hard to love when life gets tough, complicated, and painful.

I don’t know about you, but I really want to learn how to love more. You know, a consistent kind of love, the kind of love that captures hearts, and draws us to one another. (A great book to start? Bob Goff’s Love Does; Discover a Secretly Incredible Life in an Ordinary World.)

One thing I truly love is my coffee in the morning. Basically mornings for me are like this: Don’t take away my coffee. (I know, this is not sacrificial love) :)

We have a pour-over coffee maker and an espresso machine sitting on our counter, oh, and several French press coffee pots in the cupboard. Good coffee is all about the beans.

Today I’m sharing a delicious coffee pudding. I mean, who doesn’t love coffee ice cream? Well, coffee pudding is just as good, especially when there is a dab of whipped cream on top.

Back to love….God’s love is the foundation we should live by, if we want to love others more. It’s free, and it reminds me that true love gives itself as a gift, and protects, trusts, and hopes.

It’s not looking for something in return. It doesn’t manipulate or seek to control. True love captures our hearts.

Coffee Cinnamon Pudding with Sweet Cream

For this recipe today I used 1 cup of espresso, but you can also use a strong cup of French press.

How to make Coffee Pudding

To make the coffee pudding, first brew the coffee.

Then prepare the dried mixture.

Add coffee to the cream mixture.

Add dry ingredients. Cook, stirring until thickened.

Pour into cute glass containers, and serve with whipped cream.

Garnish with dusted cinnamon and a cinnamon stick.

Let’s just say I’ve never had a person turn this dessert away! :)

Coffee Cinnamon Pudding with Sweet Cream

Ingredients
 

  • 4 cups heavy whipping cream, divided
  • 1 cup strong brewed coffee
  • 4 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 1/2 cup brown sugar
  • 1 1/4 tsp. cinnamon, divided + some for dusting
  • 2 Tbsp. powdered sugar
  • 1/4 tsp. nutmeg
  • Cinnamon sticks for garnish

Instructions
 

  • In a medium saucepan, combine 3 cups of cream and the brewed coffee. Bring to a boil and then simmer for about 2 minutes, stirring constantly.
  • In a small bowl, combine the cornstarch, salt, brown sugar, and 1 teaspoon cinnamon. Mix well, using the back of a fork to get any lumps out of the mixture.
  • Add the dry mixture to the cream and coffee; bring to a boil, whisking for about 1 minute. Turn off the heat.
  • Pour the pudding into 8 cups or ramekins (about 1/2 cup in each serving). Cover each dish with plastic wrap to prevent a skin from forming on top. Refrigerate until the pudding is set and cooled, about 3 hours.
  • In a small bowl, whip the remaining 1 cup of whipping cream, adding the powdered sugar, nutmeg, and 1/4 teaspoon cinnamon at the very end, as it stiffens.
  • Serve each pudding dish with a dollop of whipped cream on top. Garnish with a cinnamon stick and light cinnamon dusting!
