I can’t help myself! I’m so excited about this recipe, cuz I make Salsa Chicken in our Tupperware Microwave Pressure Cooker (love the peach salsa idea!) in about 20 mins. for 2 chicken breasts (can do more)! And I can make the rice in our Tupperware Microwave Rice Cooker while the pressure is releasing from the chicken!!

Would this work cooked on Low for a longer period of time? I would love to be able to turn this on in the morning before work, and have it ready when I get home, but that is 10 + hours…

This recipe sounds wonderful…. I am making it this week end! Nothing better than a good crock pot recipe… Sandy as you merge into this new time of life… embrace it, enjoy it. My wife and I have been empty nesters for 9 years now….. it took some getting used to….. we raised 2 boys, so we have always cooked in bulk…. growing teenagers and their friends. I still cannot make a small pot of pasta sauce…. lol, so we freeze it…. but the time you are coming into is a fun and wonderful time for you and your husband enjoy!

I love this, Sandy! I, too, strive each day to be more like Jane- opening my home (and kitchen) to friends, family and neighbors. Its why I cook and find so much pleasure in feeding others. This recipe uses one of my favorite salsas from TJ’s. Such a simple meal and I’m craving that gorgeous rice!
