I like to make a layered bean dip (frijoles, avocado, salsa, sour cream, cheese, olives, lettuce) at home, so that it is ready to set out with chips as soon as camp is set up. It tastes exceptionally good in camp---:-)

btw--that Paul is a cutie patutie

I'm in love with your bus! We love to do family camping as well. It's always a great way to decompress and relax. Keeping it easy with the food is the best tip for camping. The appetizer plate looks lovely and I'll have to search down that jam, looks divine!!

I recently made those Caprese Salad Kabobs (Taste of Home recipe) for a baby shower function I was in charge of - for the food part of it.

Those are good, fun, easy to prepare... and delicious. And they look beautiful laid out on the platter.

The one thing I did do differently then what the recipe called for (to make it even easier) was to just get the already marinated Mozzarella balls (from Costco) and the flavors were there... the right amount of intense.
The recipe calls for plain cheese balls and that you're to drizzle the olive oil and balasmic over each kabob when ready to serve.

***
Thanks for the fruit cheese and nut idea... that sounds like a good thing to keep in the back of the mind for another time. For sure.

PS: I'm loving the VW camping van... too fun!

A cheese, fruit and nuts - I don't think I've ever heard that rule, but it sure does make putting together an appetizer platter easy and beautiful. Now I know exactly what to take to our next get together with friends!

Hi Sandy! I LOVE all the adventures you've been on lately. And I LOVE that you go camping (honestly I haven't camped since my Girl Scout Days).... you make it look so fun and easy. This is a great appetizer idea for summer get togethers. As with all you show here, it's doable for anyone and I love that. Your sweet personality comes through in your entertaining style.... so hope we can meet one day in person. Have a super day! hugs...
