Epic Silver Dollar Pancake Board

We had a FUN weekend devouring these little Silver Dollar Pancakes from Trader Joe’s!

Oh, and this is Logan. He was a super big help at our local Trader Joe’s here in Bend, Oregon.

They come in the freezer section, and they are the perfect bite for an epic breakfast board. I might add, this is perfect for Father’s Day weekend and any kind of brunch hosting that you may be doing!

Why “board” hosting is so fun

Why are boards so popular now? Because we’re all human, looking for ways to connect, to get to know one another, and a charcuterie or cheese or dinner or breakfast board is a great way to bring people together.

I’ve always said … set it out, they will come! :)

My friend BakerMama made a smaller pancake version with eggs, or you can make this Scrambled Egg Brunch Charcuterie Board!

Ingredients on this board

Everything on this board was purchased at Trader Joe’s. I love a one-stop store, where I’m in and out, and back home in no time. I’m not a big shopper.

Mini panckes, fruit, crackers, bread, berries, jam, syrup and yummy butter! Don’t forget the bacon!

The board I’m using here is 28 inches (no longer available for sale).

This size board usually feeds about 12 people. But honestly, sometimes that doesn’t make sense.

If you’re making a charcuterie for an appetizer, it could feed 24!

But if you’re serving one for a brunch, it’s around 8-12 guests.

How to make a board

  • On a large board, leave space in the center for a large bowl or plate of heated pancakes!
  • Around the outside of the board, lay down the sliced pancake bread mixed in with crackers and strawberries.
  • Arrange the cantaloupe, berries, and cooked bacon (or leave spots open for the bacon and serve hot).

  • In between, place the syrup, jam, and butter.
  • Heat the pancakes to package directions and serve hot right away!
  • Fill in any open areas with blueberries.
  • Don’t forget the butter knife!

How do you serve the food hot?

I get asked this with almost every board that I make. My answer is always the same … prepare the hot food and serve it all at once!

As in, prearrange the board, leaving room for the hot food.

Prepare the hot food.

Add it to the board.

Yell at everyone … breakfast is ready! Or whatever you want to say :)

Amen? Amen!!
