Happy October! Looking for an easy weeknight or weekend dinner idea? It’s inexpensive to roast a bag of sweet potatoes, and then serve with a variety of delicious toppings for this Epic Sweet Potato Dinner Board!

Epic Sweet Potato Dinner Board

Feel free to leave meat off the board, too, and make it Vegetarian! You can also make this Vegetarian Four Cheese Pasta Bake dish or Vegetarian Ramen Noodle Bowl.

You can also use this method of Roasted Sweet Potatoes (cut in small pieces), and use the same concept here making “bowls.”

How to roast sweet potatoes

  1. Preheat oven to 450 degrees F with the rack placed in the center of the oven.
  2. Line a large baking sheet with foil or parchment paper.
  3. Wash and dry sweet potatoes, leaving the skin on.
  4. Using a fork, poke holes all around the potato (a couple pokes per side should do the trick).
  5. Place potatoes on the lined sheet and place in oven. Bake for 65-80 minutes (depending on the size of your sweet potatoes), or until sweet potatoes are tender and caramelized (the base of the potatoes often start to get sticky and brown with caramelization near the end of baking—delicious!)
  6. Allow the potatoes to sit for about 15 minutes before serving.

I always tell my husband, when the last guests are gone and I’m ready to crash, I’m so glad we did it.

Turn your oven on, line your baking sheet with foil or parchment paper, and start the baking process!

You can always prepare (build the board) while the poatoes are roasting!

Toppings for Sweet Potato Board

  • Sour cream
  • Cuban Style Black Beans (Trader Joe’s)
  • Ham and bacon
  • Chives and cilantro
  • Pico de gallo and tahini
  • Coconut flakes
  • Sharp cheddar cheese and blue cheese crumbles
  • Specialty butters from Trader Joe’s

What do you do with leftover poatoes?

If you have any potatoes leftover from you dinner board, here’s a quick tip!

Cut the potatoes in half with the skin on or off, and add a pinch of salt. Mash them together with 1/2 cup of whipping cream and a pinch of salt for easy mashed sweet potatoes. DELISH!

Or, enjoy them in their simple, caramelized glory!

  • 11 sweet potatoes, baked
  • 2 14 oz cans Cuban Style Black Beans, Trader Joe’s

Toppings

  • Sour cream
  • Ham, chopped
  • Chives, chopped
  • Bacon, crumbled
  • Pico de gallo
  • Coconut flakes
  • Tahini
  • Sharp cheddar cheese
  • Blue cheese crumbles
  • Rosted Garlic and Herb Butter, Trader Joe’s
  • Black Truffle Butter Spread, Trader Joe’s
  • Cilantro, chopped
  • Red and green grapes

Instructions
 

  • Roast potatoes and time for doneness when you're just about ready to serve dinner! [Potatoes will stay hot on the inside for awhile after removing from the oven.]
  • On a large prepared board, fill small bowls with toppings. Leave space for the sweet potatoes. Place the bowl of beans in the center of the board.
  • When the potatoes are done, right before serving, cut a slice down the center (to make them easy for guests to fill).
  • Fill in open areas on the board with grapes, fruit, cilantro (or even Frito or corn chips). Serve!
