Flourless Brownies with Chocolate & Pecans

We went to a concert at Britt Festivals with our friends the other night, and I volunteered to pack the wine and dessert. I made my favorite Easy Flourless Brownies with Chocolate and Pecans. I surprised our friends, as we each opened our own foil packet of warm, gooey brownies, and ate them with a fork and plenty of napkins to spare, under the warm southern Oregon summer skies.

I say they are our favorite, because we love pecan pie! These brownies are rich, just like our friendship with these people who have been in our lives for years! Just like good wine, friends get better with time. The more time and investment and energy you make, the deeper the connection.

Dinner “dates” and special invites don’t just happen; we have to plan ahead and look at our calendars. It’s all about prioritizing and spending time with people who enhance, encourage, and deepen your faith, too. For my husband and me, those aspects of friendship are important.

Back to the gooey, rich, and flavorful brownies, which when made right, are an indulgent dessert that are hard to resist. We couldn’t add ice cream, but that was okay! They have such a personality of their own, it really wasn’t needed.

It’s my old favorite “go-to” dessert recipe since it only takes about 5 minutes to make and then throw in the oven. And then wrap up and jet out the door …

I can’t count how many times I dashed this recipe together, so that last minute company could arrive to a freshly baked treat.

Recipe: Flourless Brownies with Chocolate and Pecans {ReluctantEntertainer.com}

Ingredients

  • 1 cup butter (softened)
  • 2 teaspoons vanilla extract
  • 1 cup superfine sugar (I use Evaporated Cane Juice Organic Sugar)
  • 3 large eggs (beaten)
  • 1 ½ cups almond meal
  • 8 oz semi sweet chocolate chips (I use Trader Joe’s brand)
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 325ºF.
  2. In a mixing bowl, stir together the softened butter, vanilla, sugar, and eggs. Add in the almond meal, chopped nuts and chocolate chips. Stir.
  3. Spread the mixture into a sprayed 8×8 pan and bake for 30-35 minutes. The top will be set but the mixture will still be gooey.
  4. Completely cool before serving, and cut into squares.
