We love this Cinnamon Sweet Potato Granola recipe that we keep stocked in our pantry. It’s delicious on yogurt, and so good by the handful–plus, it’s gluten free!

Gluten-Free Cinnamon Sweet Potato Granola

If you sprinkle the granola over ice cream, it’s the perfect dessert! With the addition of sweet potatoes, it’s perfect for fall.

Bake the sweet potatoes ahead of time, and mash them with a fork.

How to bake sweet potatoes

  1. First, scrub potatoes and pierce with a fork.
  2. Line a baking sheet with foil; place the potatoes on top. Bake for about an hour, depending on the size of the potatoes, until soft and squishy.
  3. Remove from heat and allow to cool.

Ingredients for granola

To make the granola, add buckwheat, pipettes, gluten free oats, chia seeds, and slivered almonds into the mashed sweet potatoes.

Follow the instructions and bake. When it comes out of the oven, cool and serve (or store in your pantry!)

This granola is not very sweet (which we really like), so if you like it sweeter, just add more sugar (or honey), or you can add cranberries or raisins.

Friends, let’s talk deck patios. Since the weather has been hotter than normal here in central Oregon, we’ve been enjoying all our meals outside. At breakfast, we gather our food and enjoy the back of the house. In the evening, we eat dinner on the front deck!

Here’s a super easy breakfast: Gluten Free Cinnamon Sweet Potato Granola with a side of yogurt, blueberries, and fig jam.

Maybe you tried our Pumpkin Seed Cranberry Granola or my Grain-Free Granola Recipe last year … they are both delish, too, but this recipe today is gluten-free.

You can make a double batch for hostess gifts! Or your kids’ new teachers!

Gluten-Free Cinnamon Sweet Potato Granola

To bake sweet potatoes: Scrub sweet potatoes and pierce in several places with a fork. Line a baking sheet with foil; place the potatoes on top. Bake for 45 minutes to an hour at 400 degrees, depending on the size of the potatoes. Bake until soft and squishy. Remove from heat.

Ingredients
 

  • 3 baked sweet potatoes, baked and mashed
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 3 Tbsp. avocado oil
  • 2 Tbsp. coconut sugar or preferred natural sugar
  • 1/2 cup chia seeds
  • 2 cup gluten free oats
  • 1 cup pepitas
  • 1 cup slivered almond
  • 1 cup raw buckwheat
  • 1 cup shredded coconut

Instructions
 

  • Preheat oven to 350 degrees.
  • In large bowl, mash the baked sweet potatoes. Add oil, cinnamon, vanilla, and coconut sugar. Mix completely until smooth.
  • Add buckwheat, pepitas, gluten free oats, chia seeds, and slivered almonds into sweet potato puree. With large spoon or hands, combine wet and dry ingredients.
  • On foil-lined, greased baking sheet, spread granola evenly.
  • Bake in oven for 17-20 minutes. When time is up, flip granola, add coconut, and return to oven for additional 15-18 minutes.
  • If you prefer sweeter granola, add additional sugar.
