Well, it only makes sense since I write about hospitality and she writes about graciousness. Her blog teaches about the value of caring for others in your community. Mindy’s sharing a fabulous recipe today … and it’s really easy, too!

Here’s Mindy …

I don’t know about you, but life seems to be getting busier and busier! Busyness can sometimes get in the way of how we connect with other people. Especially where family dinners are concerned. And although I’ve tried–oh how I’ve tried–to master the art of being in two places at once, I simply have yet to find a way to make it happen.

However, what I have found is this perfect little Sammie – a great solution to being on the soccer field all afternoon and around the table come dinner time.

This little sammie is also a favorite when we entertain friends for a “big game” or casual dinner party among friends!

Here’s how it all goes down…

After a long day, this shredded chicken in the slow cooker will greet you at the door with a sweet aroma! A wonderful way to be greeted… don’t you think?

Etiquette Note: Since these sammies have a tendency to get “sloppy,” don’t ever hesitate to wave the white flag and reach for your knife and fork. They say “Pride cometh before the fall,” and in this case the fall typically is on the lap or down the front of our shirts. Yes, the knife and fork are your friend!

Slow Cooker Sammies {Gracious Girl}

Ingredients
 

  • 4 chicken breasts
  • 1/2 cup red pepper
  • 1/2 cup yellow pepper
  • 1/2 cup orange pepper
  • 1 cup shredded carrots
  • 1 minced sweet yellow onion
  • 2 1/2 cups BBQ sauce, 2 cups for slow cooker / 1 cup to spread
  • Rolls
  • Broccoli slaw–for an added crunch

Instructions
 

  • Combine chicken breasts, red pepper, yellow pepper, orange pepper, shredded carrots, minced onion in the slow cooker. Cover with 2 cups of barbecue sauce.
  • Cook on LOW 6-8 hours.
  • Shred chicken with a fork; serve on rolls to make sammies, with broccoli slaw and 1/2 cup of extra barbecue sauce on the side.
