eek! sadly this recipe didn't turn out as I had hoped. While the chicken was moist the flavor profile wasn't quite right for my family. I wasn't able to get the coconut vinegar so I substituted with the vinegar mix above(1/3 c each sherry rice and cider vinegar). The flavor of the cider vinegar was very pronounced. I know you mentioned that the coconut vinegar was really the star so perhaps don't try this recipe if you don't have the coconut vinegar, or just leave out the cider vinegar from the mixed vinegar.

You can use olive oil. Coconut oil is just healthy to cook with. What makes this recipe so yummy is the coconut vinegar! I use Coconut Secret Raw Coconut Vinegar, you can buy this at the health food stores!

Hi! This recipe looks awesome but I am curious as to why use coconut oil instead of olive oil? Is coconut flavor prominent in Greek cooking? Thanks for your help!
