This was so beautiful, Abby! I suffer from SAD – as does my mom and my grandpa did as well. It’s a horrible thing, but I am always so so happy for the new life of spring!

Oh Abby, I think of you so often!! You write beautifully just like your mama! (and dada! ;) ) I can only imagine the winter grays…I don’t think I would fare well honestly. I’m so glad you have your friend!
This is such a great meal and I’ve been wanting to experiment with cauliflower rice more now that I’ve been picking it up at TJs. I’m going to try this!

I loved the post Abby. And I feel inspired to brave a try of Cauliflower Rice (I have never liked the smell of Cauliflower cooking) Daniel suffered with SAD while a student, living in a no windows apt @ Newberg. We got him a UV lamp and he found in addition to the Vit D., Magnesium makes a difference. But good friendships, cooking meals with and for friends, were the best antidote he found by far!

YUM. I need to try this. Love this post and how beautifully transparent she was. Great job Winters are definitely hard in the NW especially when blue skies are few and far between. I don’t do “dark” and “dreary” well, though probably not to the point of SAD, but definitely can tell a little difference. Great job to your Abby!

Great post Abby!!! We here in NH also struggle with winter grey :) I find a sun lamp also helps.
Is OR more sunny??
