I made this yesterday, and it was delicious.  My chicken still looked a bit pale, however.    So, I am thinking maybe the next time I make this I will saute in the frying pan to give it a bit of color and then bake in the oven with the spinach/almond mixture on top.  Very tasty!  Thank you for giving me more encouragement and tools to extend hospitality to others!

This looks like a delicious meal and I LOVE how you put little &quot;scoops&quot; of sweet potato on the side.  You are so right - - - not going overboard on the side dishes really makes it a lot easier to entertain.  Even at holiday time I don&#039;t crazy.  Three maybe four sides is all I do, and it always turns out to be enough.  But one side for a dinner party is perfect.  

And oh how I love your idea of using mayo on the chicken.  It must make it sooooo moist.  I have to try this.  I once saw a chef on TV does this with one twist - he mixed in a little vodka with the mayo, then lathered the chicken with it.  Oh la la! ;-)
