Love your spread of veggies!  Your photographs make the food look as though I could reach out and grab some!  And that did looks lucious!

And yes, I agree with you...I think folks love to be able to bring a healthy dish to any sort of get-together in January/February when everyone seems to be wanting to eat lighter after all the delicious indulgences of the holidays!!!

We often get-together with one couple in particular who both seem to have mastered the art of delicious, yet healthy, dishes to bring along with them when they visit us.  And you will chuckle when I tell you this but the wife is a huge fan of Bushes Beans!  She is a diabetic (Type 1) which can be exceptionally serious.  Although she is on insulin, and has been for years, she is now well into her 60&#039;s and in excellent health.  She eats lots of veggies and beans!

A recipe that she brings over to our hous a lot...which is a Super Bowl favorite....is her slow cooker Texas Chicken Chillie.  It is sooooo easy to make and literally one of those open this, open that recipes and your done.  She takes two cans of any type of beans, a 16 ounce jar of mild salsa (you could use medium salsa if you want more of a kick), a small can of corn, 2 tsps. ground cumin, 1 tsp. ground corriander, a tsp. salt, a half tsp. black pepper and dumps it all into her slowe cooker.  Then she adds in about a cup or two of cut-up left over chicken and about 2 cups of water or chicken stock, if she has it on hand.  Then she puts the lid on and lets it slow cook all day. The flavors all meld together beautifully. I think it&#039;s because it sits in the slower cooker all day as opposed to just on the stove-top for a short time.  We top it with grated cheese, sour cream, and a squeeze of lime.  It&#039;s out of this world!
