Hi Sandy,
Under Recipe Ingredients, it indicates 1 cup of veggies. Then step 3. indicates about 2 cups of veggies. Have you found one amount vs. the other works best?
I am working with leftovers of black beans, pico de gallo, and a bit of corn (alas, no meat leftovers…my guys ate it all!;))
