I look at the home that we’ve raised our kids in most of their lives, and the abundance of windows and light. In fact, we do not even have window coverings on many of the windows. I love the feeling of “bringing the outside light in” and it does affect my moods. Am I on the only that loves light? I’m delighted in our house, and the sense of openness.

There’s just something about a natural setting that makes my soul happy.

I can’t explain it more than that. Except in the early mornings, when I grab my coffee and what I am reading, I gaze out the windows, and watch the sun coming up over the mountains.

It starts with coffee, God, light, a beautiful view. It’s when I gain His perspective on life, of what is important and what is not.

I know our home today has helped shaped our kids with memories of family, gatherings, food, parties, movies, outdoor movies on the back covered patio, out-of-town guests.

It’s full of love and light.

I also appreciate a look of enhancing the inside with plants, flowers, and anything outdoors-ish.

I took a simple azaela plant and wrapped it with burlap for our kitchen counter.

For a short season, we’ll enjoy it. Then, into the ground it goes.

Whether we’re clipping herbs, enjoying succulents, displaying branches, or even enjoying a potted plant before it’s time to plant in the garden beds – it feels good to be in tune with nature.

A lovely little dessert that I made in our home for my Dad and Ginny when they came for dinner earlier this week, is perfect for springtime entertaining, or even Easter.

We’re trying to eat smaller portions, so 1 or 2 bites of this is … well, heavenly.

Have you tried these delicious chocolate cups? I found them at WalMart (in Medford). They are made of 64% Dark Belgian Chocolate! You can only use these for fillings that are cool (not warm or hot), and I store mine in the pantry (not the fridge).

I’ve already posted about these cherries. And you can by lemon curd in the store (I love Trader Joe’s or Harry & David).

Ingredients
 

  • 1 package, 12 ChocoMaker Dessert Cups (64% Dark Belgian Chocolate)
  • 1/2 cup lemon curd
  • 1/2 cup Mascarpone cheese
  • 1/2 cup Black Cherries in syrup, I buy Amarena Toschi brand

Instructions
 

  • Remove the chocolate cups from packaging and arrange on a platter or tray.
  • Mix the lemon curd into the Mascarpone cheese, stirring well.
  • With a small spoon, spoon the mixture into the cups. Top with 2-3 black cherries; serve!
