I’m still learning to love fish but I feel like I would love this dish! It’s crazy packed with flavor and I love the freshness of dill.

As a kid, whenever we were feeding a crowd at lunchtime, my mum would often roast a couple of fillets of salmon, then serve it cold the next day with a sauce similar to this and pickled cucumbers. This recipe takes me right back to those happy days!
