My entire family loved this meal! Including my picky 10 year old. 😊 Fast, healthy, easy, and yummy…A new favorite in our dinner rotation! Thank you. I didn’t have have lemons or lemon juice and I used lime juice and it was perfect. I served it with a nice salad and it was so good. This is naturally gluten free and we have celiac disease so are always looking for new GF fast dinner ideas.

Made this tonight. I baked chicken tenders uncovered at 425 degrees but for only 30 minutes. I didn’t remove the pan to flip potatoes. Temperature of chicken was 171+ degrees.

Chicken was a bit dry, so probably would cook for 25 minutes next time. I had added several sliced, raw carrots, and they & new potatoes roasted nicely. I made the sauce & marinated chicken, potatoes & carrots together for 6 hours and put them on sheet pan at room temperature. I omitted the onion.

The sauce is delicious and flavored everything with a mild lemony sauce! Wish I had made more sauce. My husband & I both really liked this recipe. Cooking chicken & veggies on a sheet pan is nice and convenient. Thank you!

Yes, red onion! But it can be optional. I added it in ... thanks Amy!
