Friends, it’s chilly and dark in the mornings now here in Oregon, and it feels like Fall. I know, we have many more warm days ahead, but the mornings and evenings are a different story.

I love to reach for salads, and root vegetables, now that we are starting to enjoy autumn. Which reminds me, when our friends came to visit this past weekend, they brought us the most beautiful hostess gift.

Maybe it was really a house warming gift, but either way, it was a large basket filled with garden root vegetables, eggplant, a giant head of cabbage, green beans, and sweet tokens from their recent trip to Spain: Dry cured pork, delicious olive oil, and handmade salad tongs.

With the basket inspiration, I made a scrumptious Lentil Cabbage Salad with Lemon Dressing, in the crock pot, served over shredded cabbage.

The dressing is super easy, with lemon, the Spanish olive oil (you can use regular), orange, salt and pepper.

One of the things I love about our friends coming to visit with their 3 little kids last weekend, besides the cozy cuddling, the Lego inventions, and eating together, was a long bike ride, miles around the area where we live, then to the river and stables on our bikes.

I think about how lucky we are to live where we are, but also for freedom in general.

Freedom to invest deeply in friendships. Freedom to make new memories together. Freedom to take risks in life. My friend Steph and I talked on a long walk, and at the pool, about what it feels like to take a risk. The exhilaration, but also not being stuck in a rut, never trying new things. Being willing to take a risk with your spouse, or encouraging your kids to. Because in the process we learn so much about ourselves, and how to trust God more. There’s just something about taking a risk that makes us better people, letting go of trying to control the outcome of things and staying present in the moment. For me, moving was risky, and I had to be brave, and trust God more with my life.

So, coming home from a bike ride, we shredded the cabbage.

Added the lentil mixture on top.

And drizzled the salad with a fresh lemon dressing.

A bit of parsley garnish on top. Bam!

You can also enjoy this mixture hot or cold. Serve as a soup, or on a salad.

I’m so happy root vegetables are in abundance now, because they so remind me of fall!

Lentil Root Vegetables Cabbage Salad

Ingredients
 

  • 2 Tbsp. olive oil
  • 1 medium onion, diced
  • 1 clove garlic diced
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1-2 tsp. red pepper flakes, depending on how hot
  • 1 cup lentils
  • 2 cups vegetable stock
  • DRESSING:
  • 1 lemon juiced
  • 1/2 olive oil
  • 1 orange, juiced
  • Salt and pepper
  • Cabbage, red or green, shredded

Instructions
 

  • Heat the olive oil in a large frying pan. Add the onion and cook for 2-3 minutes. Add the garlic, carrots, and celery, and cook for another 3-4 minutes.
  • Place the mixture in a sprayed crock pot; add 1 cup of lentils, 2 cups of stock, red pepper flakes, and salt and pepper. Pour in the stock.
  • Cook on low for 4 hours, or on high for 2-3, until the lentils are soft.
  • Allow to cool. Shred the cabbage. Make the dressing.
  • Serve on top of a bed of shredded cabbage; drizzle with dressing and garnish with parsley.
  • Simmer til lentils are soft (or use slow cooker).
