We have peaches on the counter right now, and our grill is probably still hot from the fish we just cooked for tacos, so clean the grill, and plop these babies on for only a few minutes!

How to make cashew streusel

Have you ever made a streusel with cashews, almond flour, and coconut sugar? SO GOOD!

Process cashews in a food processor until fine and flour-like. Add almond flour, sugar, avocado oil, cinnamon, and allspice—pulse to combine, but don’t over-pulse.

To prolong the feeling of summer as long as possible, I have 2 suggestions.

Squeeze summer to the last drop. For us, that means camping, getting out to the lakes, kayaking, and enjoying as many meals as possible on our front deck.

There’s always the option of denial, but that only lasts for a day or two :) Although I may try to do make this recipe when we have our last week with Abby at home. Denial can be a beautiful thing.

If you are a lover of summer like I am, and melancholy finds its way to your head and heart, here are a few things to make the most of its last days.

1. Don’t over-schedule yourself. You’ll miss out on the activities you enjoy, a beautiful sunset, and possibly last-minute opportunities to share a meal with your family, friends, or neighbors.

2. Be in the moment. Make the most of your day. Work hard to accomplish the things on your list, and then go do something fun in the warm, glorious sunshine.

Today I took our Whoodle, Alder, to a new place to play ball. I get such a kick out of him with his ball. I actually met a new friend and had a great chat, I laid down in the warm grass, and soaked it all in.

Ingredients
 

  • For the Streusel: 1⁄2 cup cashews
  • 1 ⁄4 cup almond meal
  • 1 ⁄4 cup coconut sugar
  • 1 1 ⁄2 tsp. lemon zest
  • 1 ⁄2 tsp. cinnamon
  • 1/2 tsp allspice
  • 3 Tbsp avocado oil
  • For the Peaches: 1/2 lemon, juiced
  • 1 ⁄2 tsp. cinnamon
  • 4 firm peaches, halved and pitted
  • Avocado oil or cooking spray for grilling
  • Garnish: Honey for drizzling
  • Raspberries
  • Vanilla or Coconut gelato
  • Toasted almond slices

Instructions
 

  • Process cashews in a food processor until fine and flour-like. Add almond flour, sugar, avocado oil, cinnamon, and allspice—pulse to combine, but don’t over-pulse. Set aside.
  • Preheat grill (or grill pan on stovetop) to medium-high heat. Place halved peaches in a bowl, then toss with a generous amount of avocado oil (enough to coat the fruit), lemon juice, cinnamon, and a drizzle of honey. Whisk together lemon juice, honey and cinnamon in a bowl. Add peach halves and gently toss to coat.
  • Clean grill thoroughly, then lay peaches face down and grill until softened and caramelized, about 5 minutes. When soft, flip with tongs and grill on other side, 2-3 minutes.
  • Preheat broiler to 450 degrees and set your oven rack in the second-to-highest position. Lay grilled peaches face up in a 9x13 baking dish. Spoon a generous amount of streusel onto each peach half. Broil until lightly browned, about 1-3 minutes depending on the strength of your broiler (mine is intense). Serve drizzled with additional honey, almonds, raspberries, and gelato.
