Mom made it for company all the time. We also enjoyed it on Sunday nights. I love this recipe for guests, or just a family dessert night. Everyone seems to love a good upside down cake! Or, for breakfast, try this Perfect Peach Buttermilk Cake.

How do you make an easy pineapple upside down cake?

My mom always made pineapple upside down cake, you know, the kind with the cherry in each pineapple slice.  You can totally make this recipe and add pineapples instead of canned peaches. You can also use fresh peaches!

  • Fresh, frozen, or canned peaches
  • Butter
  • Brown sugar
  • White sugar
  • Egg
  • Vanilla extract + almond extract
  • All-purpose flour
  • Baking powder + SALT
  • Buttermilk
  • Heavy whipping cream
  • Powdered sugar

How do you make peach dump cake?

I don’t have an easy pineapple upside down cake on my blog, but you may want to try this Pineapple Coconut Cake with Cream Cheese Frosting if you are looking for a pineapple cake!

How do you make Peach Upside Down Cake?

  1. Prepare a 9″ round glass pie plate with cooking spray. Or, you can lay down parchement paper. Or use a skillet!
  2. Melt 2 Tbsp. butter and stir in the brown sugar until blended. Spread over parchment paper.
  3. Arrange the drained (if using canned) peach slices on top of the brown sugar mixture.
  4. Combine the batter andd spoon evenly over the peaches. Bake until the top is golden.
  5. Remove from the oven; transfer the cake to a wire rack and cool.
  6. Run a knife blade around the edge of each cake to loosen it from the pan. Invert the cake onto a serving plate. Lightly tap the bottom of the pan to loosen the cake, then lift the pan.
  7. Peel off the parchment paper.
  8. Make whipping cream and serve the cake warm and top with whipped cream, if desired.

Upside Down Cake

Spring is a wonderful time to invite people over for a meal.

You can keep it simple, make a one-pot-meal, delegate the dishes so you don’t have to do it all, or you can even head out to a restaurant and then come back home for dessert.

Last week I whipped out this recipe and made it with a jar of Trader Joe’s peaches (drain the peaches).

We’ve also made it with plums and bananas. That is what I LOVE about this kind of cake. Most any fruit will do! Or, have you tried it with pecans? And now that it’s almost spring, make Strawberry Coconut White Chocolate Upside Down Cake!)

It’s not fancy, really, but it’s warm and delicious.

For me, upside down cake is the any-time dessert.

To make the whipping cream, pour into a medium bowl and whip until thick, about 2-3 minutes. Add the powdered sugar and vanilla and gently mix together.

Serve the upside down cake warm with a dab of whipped cream on top!

Ingredients
 

  • 2 cups canned peaches (drained), or peeled peaches or frozen unsweetened sliced peaches, thawed
  • 1/4 cup butter
  • 1/2 cup packed brown sugar

Batter:

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 1/4 cups flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup buttermilk

Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 Tbsp powdered sugar
  • 1/2 tsp vanilla

Instructions
 

  • Preheat oven to 350 degrees. Use a 10- inch well seasoned cast-iron pan or clear glass pie pan (spray with cooking spray). TIP: You can also use parchment paper to lay down, then pour the butter; add the brown sugar.
  • PARCHMENT: Melt 1/4 cup butter and stir in 1/2 cup brown sugar until blended. Spread over parchment paper. CAST IRON OR PIE PLATE: Place 1/4 cup butter in a 10-in. cast-iron and heat butter until melted, about 5-7 minutes. Or, melt the butter in a clear glass pie pan. Add the brown sugar.
  • Arrange the drained (if using canned) peach slices on top of the brown sugar mixture.
  • For batter, in a large bowl, cream butter and sugar until light and fluffy. Beat in egg, vanilla, and almond extract. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with buttermilk, beating after each addition just until combined. Spread batter evenly over peaches.
  • Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool 10 minutes. Run a knife blade around the edge of each cake to loosen it from the pan. Invert the cake onto a serving plate. Lightly tap the bottom of the pan to loosen the cake, then lift the pan.
  • Peel off the parchment paper (if using).
  • To make the whipping cream, pour into a medium bowl and whip until thick, about 2-3 minutes. Add the powdered sugar and vanilla and gently mix together for about 20-30 seconds.
  • Serve the upside down cake warm with a dab of whipped cream on top!
