I’ve been healing from an illness with a very limited diet – including NO rice. :-(

I wanted a treat so I made this today. OMG! The taste reminded me of Thai coconut, sticky rice with mango where I always made extra coconut sauce.

I happened to have all the ingredients for this in my cupboard. Its so good! Literally threw it all in my blender and a few minutes later enjoying a bowl. I told myself it was cake batter while I was scraping the last bits out of blender and eating it and that was fun too. I will definitely make save this recipe to make again.
