					<description><![CDATA[For the rice/quinoa mixture, I found a microwaveable product called &quot;Seeds of Change&quot; certified organic Quinoa &#038; Brown Rice at Whole Paycheck (Foods). Perfect and no fuss.

For the chicken mole, I sauteed the thighs first. I&#039;ve never liked slow-cooked chicken that wasn&#039;t browned first. Used the leftover oil from the chicken (I forget what that is called) and put it in the sauce. 

For the finished dish I sprays lemon juice over the mole and rice. Great!!! Thanks]]></description>
