It takes a focus that doesn’t just come out of thin air, but thought (plan the meal), creativity (set the table, even if very simply), and courage.

Yes, courage to open your home, life, and cooking skills up to others, when you may feel very shy about them. I’m not really shy, but I know others are!

Learn as you go

The more I cook and try new recipes, and master some that I really love to serve to guests (easy ones!), the more I learn about planning, organization, and short cuts (so I have more time to spend with my guests). I learn, and then I put it into action.

Cooking and hosting are sort of a dance. Your hands are busy at all times, but at the same time you’re listening, engaging, feeling the groove of the party.

The groove for me is knowing what comes next, when to focus on the next course, when to serve it, when to switch up the conversation, when to end the party—to sum it up!

Oh, and sometimes it’s “when to get a box of Kleenex.”

So, in the spirit of easy entertaining, planning a party, and celebrating … I do have a group of ladies coming over for dinner soon. And guess what? I’ve invited 3 new guests who’ve never had dinner in my home before.

The dessert … well, it is St. Patrick’s Day week, so I thought this Mint Oreo Pistachio Ice Cream Pie would be appropriate to serve.

We love mint ice cream, but I wanted to try a new Tillamook (from Oregon!) ice cream, so we chose Grandma’s Cake Batter.

Drizzle with fudge. Sprinkle with more Oreos and pistachio nuts!

With skinny slices (it’s rich), and a cup of Storyville coffee? You can’t go wrong!

Oreo Mint Pistachio Ice Cream Pie

Keeps up to 10 days. Use your favorite flavor of ice cream, and flavored Oreo cookies!

Ingredients
 

  • 30 Oreo cookies, mashed
  • 1/2 gallon Favorite flavor ice cream
  • 1/2 cup butter, softened
  • 1 4 oz jar Fudge topping, (I use Trader Joe’s)
  • 3/4 cup pistachio nuts

Instructions
 

  • Mash cookies in a Ziploc bag (sealed; use a rolling pin).
  • Mix mashed cookies with melted butter and press into an 8” pie pan, reserving 1/2 cup.
  • Spread ice cream on top of Oreo crust.
  • Spread fudge topping over ice cream. Sprinkle with remaining crumbs and then the nuts on top; freeze for at least 2 hours before serving.
