Congrats to Rebecca! That should be a very fun and interesting tour.
I have to start keeping those puff pastry cups on hand. They make every thing look elegant. I have always loved the color of beets. They are so jeweled toned. But I have just started eating them. I have gone decades not liking them, so this a pretty big turn around. It was a beet salad that pulled me in.

Who could not love puff pastry? It’s one of my favorite foods that can be made into so many different dishes! Love those roasted beats. Great idea!
