Friends, I love the layers of a cake. Some cakes are more complex than others, a bit more festive (for the season), elegant, or fancy. I think of my friend, Amanda (I am Baker), who makes the prettiest cake ever!

Some are mouth-watering in their simplicity, with one pretty garnish on top, like this Pumpkin Chocolate Texas Sheet Cake Recipe! Super easy, a dessert that everyone loves. (Are you following my Instagram Stories (videos)? You would have seen the progress of this cake being made.)

I think about feasting on life. Sometimes life doesn’t feel like a feast. When you consider the layers of disappointments, loss, sadness, and painful relationships most of us have experienced–life can be hard.

Life happens, a death of a loved one (Paul and I lost 3 parents in a short period of time when we got married), or a death of a relationship (hand raised, this is a reality for most people too). The loss of a job, finances, or even joy! These pains cause layers of disappointment, anger, resentment, and hurt.

It’s how we move through these painful situations in our lives that will make a difference. We take our experiences and use them for good, with love and hope and forgiveness to help others. Paul and I have helped quite a few couples, and many times our conversations happen around the dinner table.

We take those layers of pain that shape us, to be more authentic, honest, and real (and we show our kids in the process). Even our regrets are hard. But they are real. And we learn from them. I say that we show our kids, because our kids are always watching. ALWAYS. They begin to respect us more when we are real and honest about the hard stuff in life.

Back to baking a cake. I’m not a baker. I’ve never had the attention span for fancy cake decorating. Honestly, I like to bake a simple cake.

Two easy layers–a chocolate and pumpkin very MOIST cake.

With one delicious cream cheese frosting. Make sure and frost the cake when it’s hot out of the oven!

This cake is a reminder to me of how we deal with hard things in life.

The first thing is to be honest with ourselves = HONESTY
Talk over your pain with a person you trust = TRUSTWORTHY
Listen to advice and gain wisdom = WISDOM
Do a heart check and forgive and move on – FORGIVE
Learn from your mistakes, make things right if needed – HUMILITY

Hope keeps us going. The hard never, ever leaves us. But we can use it to love others more.

Pumpkin Chocolate Texas Sheet Cake Recipe

Ingredients
 

  • 1 cup butter
  • 1 cup water
  • 1/2 cup cocoa
  • 2 cups sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon baking soda
  • 2 teaspoon pumpkin pie spice
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • FROSTING:
  • 1/2 cup butter
  • 1/4 cup milk plus more if needed
  • 1 box, 1 pound powdered sugar, sifted (4 1/4 cups sifted)
  • 4 oz. softened cream cheese
  • 1/2 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice

Instructions
 

  • Combine the butter, water, and cocoa in saucepan over medium heat; heat until butter melts.
  • Add sugar, flour, salt, eggs, baking soda, pumpkin pie spice, sour cream, and vanilla; mix well. Pour into a 15x10x1-inch jelly roll pan. (I use the Pampered Chef Bar Pan.)
  • Bake at 350 for 20 minutes. Make the frosting in the meantime.
  • For frosting, combine butter and milk in a saucepan; bring to a boil. Add remaining ingredients and mix well with electric mixer. Allow to cool for 15 minutes.
  • Spread frosting over hot cake; cool and serve!
