  • Blanched or fresh peas
  • Banched asparagus
  • Avocado
  • Soft-boiled eggs
  • Goat cheese
  • Butter leaf lettuce
  • Salmon fillet
  • Mint
  • Pepper
  • Salt
  • Olive oil and balsamic vinegar

Butter Leaf Salmon Salad with Peas and Eggs

It only takes a minute to make a pretty presentation.

On a large platter, spread out butter leaf lettuce.

Next, layer on avocado, salmon pieces, asparagus, cheese, eggs, and peas. Sprinkle on mint, crack with fresh salt and pepper, and serve!

If you’re grilling salmon, save a small portion for this salad.

For blanching peas, boil in salted water for 45 seconds before draining and transferring to an ice bath.

Blanching asparagus is easy, too! Boil for about 3 minutes (depending on how thick or thin the stalks are) before draining and placing in ice bath.

Melissa Michaels says in her new book Dwelling, “The connections we invest in can change the course of our lives and the lives around us.” Gathering people, and meeting new people, can literally change the course of our lives. We know, because this has happened to us.

5. We become better people when we’re hospitable (even when we’re experiencing our own pain), because we are giving of ourselves. We inspire and motivate one another when we need a boost of confidence or courage, to pursue something, or get back on track. Life can be tiring, and having the right people in your life can change everything.

6. Hospitality is a cure for the lonely. Amen. Who around you can you invite over who needs a good meal, a few hours of people showing that they actually care about them, and a listening ear?

7. Offering hospitality is one of the most powerful and tangible expressions of love, often made through body-nourishing food. I’ve always said food + people = love. It can be as simple as sharing lunch with one or two people.
