Our garden isn’t the prettiest this year, but it’s producing fabulous tomatoes, zucchini, peppers, and green beans. Over in the side yard is a bed of wild potatoes. I say wild, because we deliberately leave some in the ground year after year, so they produce beautiful homegrown, organic potatoes again and again. One of our favorite things is to barbecue the small ones for guests that come to dinner.

Eliminate the impossible.

Which, by the way, I was thinking this morning how simple our lives would be if we eliminated impossible things. Things such as “the perfect house,” the friendships you may be chasing after, hosting others and nothing going wrong (LOL), the family that has no problems. There is no perfect, and getting these thoughts from our minds frees us to do what we’re suppose to do in this life. Intentional living is about purpose, and for me this means I remove silly thoughts and things that bog me down. Sometimes these thoughts or things that plague our minds probably weren’t meant to be, anyway, so why not concentrate on what works for you? It feels “right” to start the day off with a healthy mindset, to pray about the day, and move forward with confidence.

What’s remembered when I’m invited over.

I can’t think of a time when I was invited to a friend’s house, where the thoughts of “community” weren’t at the forefront of my mind, over what their house looked like or what was on the menu. I may admire decor or something that stands out in a friend’s home when we get a dinner invite, but I never remember what’s out of place, dirty, what dishes were used, if coffee was served or not. I remember the people around the table, the feeling, the mood, the passion, the excitement, sometimes sadness, but then encouragement. Part of living with community is sharing our hearts and lives with others!

One of the greatest compliments I ever received about our home was from friends who came to stay with us and said how they loved being in our home because it was so peaceful.

Peace is good.

Peace is good. When people come to my home, I want them to feel a spirit of peace, a place of connectedness, and warmth. Because peace isn’t about getting the dishes in the dishwasher before dessert is served, or making sure that the kids are being quiet, or the dog isn’t barking. Peace is making the point to invite people into our space and to do life with them, which can sometimes be messy, but it involves work, commitment, love, and intention, with a goal of peace.

Last weekend we served Paul’s savory potatoes. They were pulled fresh from the garden, with very few ingredients added, cooked, and served to our guests! You can cook on the stovetop, or toss in a barbecue basket and cook alongside the meat. ENJOY!

Savory Potatoes

Prep Time: 10 minutes
Cook Time: 25 minutes

Ingredients
 

  • 5-6 cups potatoes, larger ones cut up into 1 1/2 inch or so pieces, smaller ones left whole
  • 3 caps of liquid smoke
  • Liberal amount of favorite seasoning, or salt and pepper
  • 4 Tbsp. butter
  • Rosemary or thyme, or both, chopped

Instructions
 

  • Place the potatoes in the microwave 3-5 minutes until barely tender. Season the potatoes.
  • Melt the butter in a large frying pan on high; add the potatoes and cook until brown, then drop the heat down to low. (Or, at this point, when prepared, toss on the barbecue in a basket).
  • Cook until the potatoes are soft. Add rosemary and thyme. Season to taste.
  • Optional to add onions and mushrooms.
