It sounds like the center wasn&#039;t quite finished baking. Banana bread can look perfectly done on top before the middle is set. Next time, tent the top with foil if it&#039;s browning and give it another 5–15 minutes. I use 3/4 cup sugar instead of a cup, increased the vanilla a bit and us 1/2 (or more) wheat flour. 

I have also shared this recipe with my sister and she loves it 😍 
We are going to try this recipe with zucchini because we can not find a good one for zucchini.
