Friends, here’s something you should know about me. I’m a daisy lover (and a Summer Mini Charcuterie Board lover). Daisies have always been one of my favorite flowers, because they remind me of my late aunt, who was a huge part of my life. Aunt Ellen was a balcony person to Paul and me when we had small children.

As in, she built us up constantly with words of encouragement, advice, and a listening ear. Honestly, my blog is what it is today, because of Aunt Ellen. By the way, my Aunt Ellen was all about hosting, so she would have been crazy about this Grilled Fruit Vegetable Charcuterie!

Remember the Summer Ice Cream Trough? As a kid I enjoyed this with friends, but as an adult, she was the one who reminded me to make this for my kids’ parties!

Today for a summer table, I’m sharing these beautiful daisies and a mini charcuterie board.

I love to start off a summer party with a fun, festive appetizer, and a thankful mindset.

We’ve been blessed with so much, and when people join us for dinner, I’m truly grateful.

A thankful mindset

A thankful mindset really keeps you in touch with reality. As my children are older now, I see gratitude welling up inside of them. I see it, because the simple things like hiking and enjoying nature with them, show me a few things about them:

  1. Thankfulness. Our kids are always thanking Paul and me for what they’ve been given. It’s far greater than money or things; it’s the gift of “family.” My heart melts when I hear those words.
  2. Tenderness. Because they are thankful, their quick and tender way of seeing the daily gifts that come their way–like being able to enjoy nature together as a family, or a family dinner–is evident in their actions and words.
  3. Generosity. It’s easy to take the gifts of life for granted, to accept them casually. No one is perfect at this, but when you don’t have a sense of entitlement, the tiniest of blessings make your heart full with gratitude.

Today I’m grateful for summer, daisies, my family, friends, and good food.

Ingredients
 

  • Mini carrots
  • Bell peppers
  • Cucumbers
  • Red beet hummus
  • Gluten-free crackers
  • Fresh blackberries
  • Cherries
  • Boursin Cheese, soft cheese
  • Mozzarella balls
  • Salami
  • Basil for garnish

Instructions
 

  • Place the cheese in the center of a round board or tray. Arrange the rest of the ingredients around the cheese. Fill in the open areas with crackers. Serve!
