To turn it into a bowl you can add shredded cabbage, black beans, rice, crispy butternut squash – whatever your fave veggies are. Add a drizzle of dressing or salsa and sour cream. And fresh squeezed lime!

Omg this was delicious! I made it last night and then my husband and I ate it for breakfast with a fried egg on top. I added some fresh spinach while it was cooking for extra veggies. I’m definitely adding this to my dinner rotation. Thank you for this recipe!

This went so far! I do meal prep on Sunday nights for my week ahead and this lasted! I even shared a couple of servings with my mom. 

A couple of things I did differently:
I added a diced green pepper. I felt like it might be too sweet for my taste with the cinnamon and sweet potato… It was really good, but I still haven’t made the original recipe, so I don’t know if it was an improvement.
I also served it with the suggested cilantro, but added a bit of goat cheese… Wow! I think I might serve it over some brown rice next time. This is an amazing and versatile recipe!
