Our friends came from out of town last weekend, and I made one of our family-favorites, Sweet Potato Mushroom Ground Turkey Bowls.

We actually had 3 sets of friends coming through in 4 days, and my mind went to why I love to host. It’s basically serving. You are preparing your home, planning meals, and serving others!

I believe one important point in serving is to first learn.

For me, learning to serve is to see people not through my eyes, but through my Maker’s eyes. To learn who they are, and to lean in to what’s happening in their lives right now, their concerns, pains and joy.

When company’s coming, I honestly wake up on those days ready to serve, love, and put others before myself.

As I give, I find that I gain so much more.

Because we have a choice to receive, just as much as a choice to give.

What have I received? I have received a whole new perspective on generosity.

We learn and experience something new with every person who sets foot into our home. (Hello, Alder-Bear!)

Today’s recipe, Sweet Potato Mushroom Ground Turkey, is just for the meat mixture; easy for company to enjoy tacos, enchiladas, or bowls (our favorite).

Because we hosted several meals, I tripled the recipe, so I could serve it for several meals. How smart is that? (wink-wink).

A newbie hosting tip: Double or triple a recipe that is good enough for leftovers; reheat and serve the same meal for new guests. They’ll never know you ate it the night before, and look at the amount of time that you can save.

Ingredients
 

  • 2 cups sliced mushrooms, crimini or any mushroom of choice
  • 1 pound ground turkey
  • 1 medium sweet potato, diced
  • 1 sweet onion, finely diced
  • 2 Tbsp. cumin
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. paprika
  • 1 tsp. coriander
  • 1 Tbsp. chili powder
  • 1 tsp. garlic powder
  • 4 Tbsp. olive oil, divided in half
  • Salt and pepper to taste

Instructions
 

  • In large pan, add 2 Tbsp. of oil and allow to heat up. When hot, add sweet potato, stirring frequently for about three minutes. Reduce heat and place cover on top of potatoes. Stir occasionally for about 6-8 minutes, or until soft. When soft, salt and pepper to taste and set aside.
  • Add 2 Tbsp. oil into a separate hot pan. When oil is hot, add onion and mushroom, cooking on medium heat until translucent and soft, about 5 minutes. When cooked, add ground turkey, sweet potato, salt and pepper to taste, and spices. Constantly stir until meat is fully cooked.
  • Serve with fresh cilantro on tacos, taco salads, burritos, and more.
