Sitting down for dinner with my family makes me happy! I often sit down, with a sigh of relief … and know the rest of the evening is going to be pure relaxation, fun, with laughter, talking, catching up. Even though we have clean up, dishes, and getting ready for bed … I savor the moment of good food, the people around me, the comfort of our home, my health, and a new tomorrow.

I love relaxing, sleeping, and then waking up early the next morning and starting it all over again.

Some days things just don’t go smoothly, but I’m thankful when I go to bed at night, for the challenges that help me grow as a person. There’s something about a new day that is not only fresh (air, dew, rest, even relationships), but that holds the promise that if we messed up, all things can be new again!

Hope for the day.

I need that hope on a daily basis! I really can’t survive apart from God; His mercies are like a fountain of grace. I  breathe, eat, sleep, work hard, but I can’t live without him. Every morning I’m reminded of this beautiful hope … and I grasp it into my heart with my thoughts, prayers, and gratitude, the minute I wake up!

I recently snipped a few sweet lilac branches (along with a few other plants for my yard) from my friend Jeannie’s house, and brought them home to make 2 lovely arrangements.

Jeannie is always so creative in her flower arranging, I love to applaud her in her efforts.

I don’t know about you, but I find that life gets sweeter when you point out the “good things” or talents that other people have. Balcony people are what makes this world a better place, that is for sure.

All you need is a pretty vessel, which can pretty much be anything … a vase, bucket, glass jar, basket with a vase inside.

I also made a pan of one of my favorite brownies for my sisters earlier this week. Favorite because it includes coconut in the ingredients.

Toasted Coconut Brownies

Perfect brownies with crunchy toasted coconut on top!

Cook Time: 35 minutes

Ingredients
 

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 tsp. vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 cup cocoa
  • 1 cup coconut, divided

Instructions
 

  • Preheat oven to 350°.
  • In a large bowl, cream the butter and sugar until light and fluffy. Add in eggs, one at a time, beating well. Add in vanilla, flour and cocoa; gradually beat into the creamed mixture just until blended. Stir in 1/2 cup coconut.
  • In a greased 13-in. x 9-in. baking pan, spread the brownie mixture. Sprinkle with remaining 1/2 cup of coconut.
  • Bake at 350° for 35-40 minutes or until a toothpick inserted near the middle of the brownies comes out moist (do not overbake). Cool on a wire rack for at least 2 hours.
  • The coconut will be toasted on top. After cooling, cut into small pieces and serve.
