This post is from a few years ago when we camped at Pacific City, OR. Our favorite bean on the Oregon coast, we brought along this foil pack dinner to put on the fire. The perfect camping dinner.

On Pacific City beach, you get to drive down to the sand. So we pretend we’re in California! But truly, this part of the Oregon beach is spectacular.

Fold up our bedding and pack up the car.
And drive back down to the beach.

Vegetable Sausage Foil Pack Dinner

How do you make a foil pack meal?

I prepared the easiest campfire food ahead of time. You have the option of making these packs Vegetarian or not.

  1. Cut 4 sheets of heavy-duty foil into 16-inch squares and place on flat work surface.
  2. Prepare veggies: Microwave the sweet potato first. Cut into 2-inch pieces, leaving the skin on. Cut the other veggies into pieces; place in a bowl and cover with plastic wrap (with 2 Tbsp. water) and steam for a few more minutes.
  3. Cut the sausage into pieces and sauté until lightly brown on each side.
  4. Divide the meat and veggies into 2 pieces of foil; salt and pepper the ingredients and drizzle with olive oil. For each pouch, bring 2 opposite sides of foil together across the middle, and fold to make a seam 1 inch wide. Do on the opposite end to seal the pouch securely.
  5. In a fire pit, build a wood fire about as wide as the cooking grate. Let it burn to low flames and embers.
  6. Set bundles on grill and cook, turning over with tongs every 10 minutes, until vegetables are tender, about 30 minutes (to check, open with a knife).
  7. Protecting hands with grilling gloves, open pouches and garnish with fresh herbs and Parmesan cheese.
