So good! I had some leftover watermelon in the fridge, some feta from the farmers market and just bought a basil plant so I tried a piece of this today. Oh YUM! it might be my summer go to lunch..lol.

Last weekend I hosted a baby shower for my daughter and I was reminded again how much I love providing good food for friends. In the season of life we are in, we don’t get opportunities to have people over often and sometimes it’s just the two of us and even then, it all depends on when hubby gets home from work…so I don’t cook near as often as I used to. Time to get creative with simpler meals and rethink what “dinner” means.
