Make skewers ahead and refrigerate for grilling later!
Ingredients
1Tbsp.chilli powder
½Tbsp.cumin
½tsp.paprika
1tsp.garlic powder
1lime, juiced
1tsp.cinnamon
Salt to taste
1 ½poundsof chicken breast, cut into 1-2 inch cubes
½pineapple, cut into 1 inch cubes
1mango cut into 1/2 inch cubes
Cilantro
Grilled peppers, grill on the side for garnish
Instructions
Wash, dry, and tenderize chicken, then cut into 1-2 inch cubes. Place in large bowl, then toss with chili powder, cumin, paprika, garlic powder, cinnamon, salt, and lime juice.
Place 1 piece of chicken, one piece of pineapple, another piece of chicken, a cube of mango, and one last piece of chicken on each skewer. Repeat until chicken, pineapple, and mango are used.
Heat grill to high. When hot, spray skewers with oil (to get grill marks) and place on grill for 15-20 minutes—flipping once midway through.
At the same time, grill peppers for garnish (optional).
Garnish with cilantro, lime, and grilled bell peppers.
