Ingredients
½cupbutter, softened
1cupsugar
2eggs, beaten
1 ½cupsflour
1tsp.baking soda
½cupsour cream
½tsp.salt
1– 1/2 cup mashed bananas, about 3
1tsp.vanilla
½tsp.almond extract
1cupwalnuts, chopped
Instructions
Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
Whisk together the flour and salt; combine with the butter mixture.
In a separate bowl, add 1 tsp. baking soda to the sour cream; stir well. Add in the bananas, vanilla and almond extracts, and walnuts; stir well.
Add this mixture to the main mixture; mix well.
Pour into prepared pans and bake for 50 minutes.
Cool for 10 minutes and then turn the loaf out onto a rack.
