Use long wood skewers that you can break off to keep the food items together.
Ingredients
1lb.frozen meatballs, thawed
1large can of pineapple chunks, drained (save the juice for later)
2green or red peppers cut into 1-inch pieces
½cupdark brown sugar
¼cupvinegar
Instructions
Bake the meatballs at 350 degrees for 30 minutes, until browned.
Remove from the oven and drain any grease or absorb with a paper towel.
Microwave the pepper pieces for 1-2 minutes until tender.
Thread one piece of pepper, one meatball, and one piece of pineapple onto a wood skewer. Break off at the end, making all kabobs the same length. Repeat until you’ve used all of the ingredients.
In a small bowl combine the pineapple juice, brown sugar and vinegar. Add more brown sugar if needed to thicken the sauce.
Lay the skewers on a platter and drizzle the sauce over the top. Serve.
How to keep warm:
Follow directions above and place on a cookie sheet or baking pan at 200 degrees to keep warm until serving.
For smaller bites cut the meatball in 1/2 and use a smaller piece of pepper.
