Vanilla ice-cream, option for if you don’t want ricotta

Heat the oven to 400°.
Melt butter and maple syrup together in the microwave for 20-25 seconds. Whisk together until creamy.
On a parchment-lined, rimmed baking sheet, arrange the pears cut-side-down in a single layer. Pour the butter and maple mixture over the top and sprinkle with a pinch of kosher salt on each pear.
Bake the pears, turning them every 20 minutes (3 times total) to coat in the maple butter, until they are tender and caramelized. You will end with the cut side down.
Sprinkle brown sugar on the pears before returning them to the oven for the final 20-25 minutes. This will allow the pears to have extra caramelization.
When pears are golden and caramelized, remove form oven and serve immediately with toasted almonds and a dollop of ricotta or a scoop of vanilla ice-cream.
