On a large prepared board, place a large plate in the center (to hold the blintzes). Start the baking or stovetop cooking process of the blintzes about 25 minutes before ready to serve.
On the stove, heat a skillet on low. Add butter or cooking spray and cook the blintzes on low for about 8 minutes, turning regularly. You can then keep warm in the oven until ready to serve.
In the oven (or toaster oven) at 400 degrees, spray a baking sheet and bake for 7 minutes. Flip over, and bake an additonal 3 minutes. Turn the oven off and keep warm until ready to serve.
While the blintzes are cooking, arrange the rest of the food items on the board. Place the strawberries, whipped cream, and the cream cheese spread in small bowls.
Cook the sausage.
Spread the cream cheese in the ham; roll and cut into bite sizes.
When ready to serve, place the warm blintzes on the large plate.
Garnish with a RED PEAR (festive!), berries, sage, and rosemary and serve!
