Bring a large pot of water to a boil with 1/3 cup kosher salt—enough water to just cover the cauliflower head. Add the head and boil for 12 minutes. When the cauliflower is tender, remove from the water and pat dry.
Place on baking sheet and rub with olive oil, salt, and paprika.
Place in the lower third of the oven for 23-25 minutes.
To serve, cut into 4 thick steaks and enjoy à la carte or with additional sauces.
