Shape beef into 6 patties (about as wide as your burger buns). Using your thumb, make a dimple in the center of the patty to prevent extra shrinkage while cooking. Season both sides generously with salt and pepper. Set aside.
If you are toasting the buns, spread mayonnaise or butter onto both halves. Set aside.
Heat grill to about 400 degrees. Spray patties with nonstick spray, then place on grill—cook for 3-5 minutes each side, depending on your desired doneness, 3 minutes for medium-rare. Allow burgers to rest while you toast your burger buns.
To assemble, layer the arugula and tomato on the bottom half of your bun, followed by the patty.
Spread a generous amount of goat cheese and jam on the top bun and assemble, using a skewer to ensure burger stability.
