Double Chocolate Banana Muffins are baked to a soft bite of goodness--the best chocolate banana muffins. Swap out the walnuts for other nuts!Makes 16 standard sized muffinsIf you have time, remove the skins of the walnuts by wrapping them in a tea towel and gently rubbing them off.
Ingredients
1call purpose flour, + 2 Tbsp
½ccocoa powder
1tspbaking soda
1 ⅛tspbaking powder
1tspespresso powder, fine to omit if you don’t have
1tspkosher salt
6Tbspbutter, melted
⅔csugar
1egg, lightly beaten
3bananas, ripe, mashed
1tspvanilla
¾cdark chocolate chips
¾cwalnuts, toasted, roughly chopped
Instructions
Preheat oven to 375 degrees and prepare a muffin pan with paper cups and nonstick spray. Set aside.
In a medium mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, espresso powder, and salt. Whisk until combined and set aside.
In a large mixing bowl, combine the melted butter, sugar, egg, bananas, and vanilla. Stir to combine, then add the dry ingredients in 2-3 portions. Mix until just combined, then add the chocolate chips and walnuts. Stir to incorporate, then portion into 16 cups. Bake for 17-20 minutes, or until a tester inserted into the center of a muffin comes out clean.
Remove from the tins and allow to cool for at least 30 minutes before enjoying (if you can wait that long :o).
