A sweet, fresh, summer salad with quinoa, radishes, corn off the cob, and snap peas. Delicious served with a Green Goddess Dressing.
Ingredients
SALAD: 5 corn cobs, corn cut off
5thinly shaven radishes
2cupssnap peas, cut into 2-3 piece segments
3cupscooked quinoa
Dressing: 2 cups roughly chopped cilantro
1/2cuproughly chopped mint leaves
4green onion stalks
1Tbsp.apple cider vinegar
1juiced lemon
Salt and pepper to taste
1/4cupolive oil, plus a some
1/2large, ripe avocado
1/3cupunsweetened dairy free or Greek yogurt, I used an unsweetened cashew yogurt
2Tbsp.water
Instructions
In food processor or blender, combine all dressing ingredients. If dressing is too thick, add in a little water or olive oil. Once smooth and blended, place in refrigerator for later.
In large bowl, mix together quinoa, snap peas, radishes, and corn.
Either serve with dressing on the side, or mix the green goddess dressing into the quinoa mixture. Garnish with mint and serve cold!
