1/2csoy sauce or coconut aminos, for SOY free gluten free soy sauce exists
2Tbsp.honey
3Tbsp.fresh minced garlic
2Tbsp.fresh minced ginger
2Tbsp.olive oil
6chicken breasts, tenderized
2c.cooked brown rice
1/4-1/2c.chopped green onion
2-3cupsof mixed veggies to steam
Instructions
Combine lime, soy sauce, honey, 1 Tbsp. ginger, and 2 Tbsp. garlic in a large bowl and thoroughly mix. Add chicken breasts and allow to marinate for 30 minutes.
Heat a large sauce pan. When hot, add chicken, pouring the remaining marinade on top.
Cook for 15-20 minutes.
Remove from pan and chop into strips.
Using your instapot, steam broccoli for 2 minutes, using the quick release when time is up. Add and additional 1-2 minutes for carrots and Brussel's sprouts.
In large sauce pan, heat 2 Tbsp oil. Add 1 Tbsp. garlic and 1 Tbsp. ginger, stirring until golden. Add in rice and continue to cook for about 5-7 minutes. Add in the green onion and remove from heat.
Serve chicken, rice, and veggies together with desired sauce.
