Pear and Cranberry bites are an easy endive appetizer to bring to a party--gluten-free, low carb, drizzled with honey, and delicious!Double or triple the recipe for a large group!
Ingredients
1head Belgian endive
½Bartlett pear, cored and diced (leave skin on)
3-4Tbsp.crumbled goat cheese
⅓cupdried cranberries, coarsely chopped
¼cupchopped toasted walnuts
Honey, for drizzling
Instructions
Cut the base off of the head of endive and separate the spears (or gently pull off). Place on a flat surface, board or plate.
Spread the goat cheese on the bottom of the endive. Sprinkle with pears, cranberries, and walnuts.
