Pumpkin Seed Cranberry Granola

Ingredients

coconut flakes

I bought the chips at Fred Meyer in the bulk section

sliced almonds

pumpkin seeds

cup
walnuts

cinnamon

dark brown sugar

cup
pure maple syrup

cup
water
1/2
cup
oil
,
I used olive oil

tsp.
salt

cups
dried cranberries

I buy Orange Cranberries from Trader Joe’s
Instructions
Preheat oven to 250 degrees. Line 2 large baking sheets with foil or parchment paper.
Mix all of the ingredients together in a giant bowl (except for the cranberries). Mix well.
Spread evenly on the 2 baking sheets. Bake for 40 minutes; stir. Bake an additional 40 minutes, until golden brown. Allow to completely cool.
Place the granola back into a large bowl; add the cranberries. Stir and mix well. Store in airtight container or Ziplock bags.
