Tortilla Chicken Pie is a recipe is a quick taco pie meal to make with a few pantry food items, and fresh ingredients such as tortillas, rotisserie chicken, and cheese. Make in a pie pan or an 8x8 pan!
Ingredients
12corn tortillas, 6-inch
2 ½cupscooked, shredded chicken (I use rotisserie)
18 ozcan chopped green chiles
2cupssalsa
1 ½cupssour cream + extra for topping
3cupsMonterey Jack cheese, shredded, or a Mexican cheese blend
Fresh cilantro
Fresh tomatoes
Instructions
Preheat oven to 375 degrees. In an 8-inch square baking dish, layer 4 tortillas, 3/4 cup chicken, green chiles, salsa, cup sour cream, and cheese; repeat layers.
Top with remaining tortillas, salsa, and cheese. Bake until top is browned and bubbling, 30 to 40 minutes.
Garnish with sour cream, fresh cilantro, and chopped fresh tomatoes.
