White Bean Chili made with Great Northern White Beans or Cannellini Beans; perfect for tailgating, or a casual gathering! Double the recipe for a large group!
Ingredients
2Tbspolive oil
1large sweet onion, finely chopped
17 oz canchopped green chilies, drained
215 oz canscrushed fire roasted tomatoes, undrained
3Tbspall-purpose flour
4tspground cumin
1tsppaprika
1/2tspchili pepper
Salt and pepper
215 oz cansGreat Northern Beans (or Cannellini Beans), undrained
214.5 oz canschicken broth
3cupsfinely chopped cooked chicken breast, (I use Rotisserie chicken)
Optional chili toppings:
1-2cupsShredded Monterey Jack cheese
Sour cream
Salsa
Chips (Fritos or tortillas chips)
Corn bread
Avocados or guacamole
Chopped red onion or green onion
Jalapenos
Instructions
In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour, cumin, paprika, and chili pepper; cook and stir for 2 minutes.
Add beans and chicken broth; bring to a boil.
Reduce heat; simmer for 10 minutes or until thickened. Add chicken; heat until hot. Salt and pepper to taste.
Garnish with cheese, sour cream and salsa, if desired.
