Ingredients

DeLallo Whole Wheat Penne Rigate’

cooked, drained, and cooled

cups
chicken
,
cooked and chopped (I used rotisserie – optional)
½
cup
celery
,
chopped
½
cup
red onion
,
chopped
1
cup
jimica
,
juilenned
2
cups
small red grapes
1
20 oz. can
pineapple chunks
,
drained (reserve ¼ cup juice for dressing)
½
cup
cilantro
,
finely chopped
1
cup
mayonnaise
3-4
Tbsp.
curry
,
to taste
Salt and pepper to taste
Instructions
Cook pasta according to package directions; cool and set aside.
In a large bowl, combine cooked, cooled pasta, chicken, celery, onion, jimica, grapes, pineapple, and cilantro.
Mix the mayonnaise, curry, salt and pepper, and pineapple juice in a small bowl. Add to the pasta mixture.
Gently toss and chill. Serve cold!
