In medium bowl, toss nuts in orange juice, vanilla, and cinnamon—drain any excess liquid from nuts after they are evenly coated.
Spread onto baking sheet and sprinkle very lightly with salt.
Bake for 8 minutes, stir nuts, then return to oven for about 8 more minutes. Stir once more, and return to oven for about 3-5 more minutes (depends on how toasted you like your nuts).
