Ways to serve the salad: As a sandwich on your favorite bread, scooped out in a tomato or an avocado, mixed with pasta or grains, or as a dip with crackers, or serve on a Chicken Croissant Sandwich Board.
Ingredients
Chicken salad:
3stalks celery, diced
2cseedless red grapes, halved
2 ½crotisserie chicken breast, chopped
½cshaved almonds
1small red onion, finely diced
⅓cchives, finely chopped
½cdill, roughly chopped
Dressing:
1tsplemon zest
¾TbspDijon mustard
2 ½Tbspsherry vinegar
½cmayo
¼csour cream
2tsphoney
Salt and pepper to taste
1tspor curry or tarragon, optional
Instructions
In a large bowl, combine the chicken, celery, grapes, almonds, onions, chives, and dill. Set aside.
In a separate bowl, combine all the ingredients for the dressing and whisk until smooth. Salt and pepper to taste, then fold into the chicken mixture.
